Elderflower Wine

Gather the flowers on a sunny day when they are fully opened, and trim from the stems with a pair of scissors until you have the right amount (pressed down lightly)

Bring the water to the boil and pour over the flowers, then add the sugar, chopped raisins and lemon juice.

Allow to cool to about 70F and add the activated yeast and nutrient. (The nutrient is most important in this wine).

Cover well and leave to ferment in a warm place for about 4 days.

Strain it off the flowers and raisins into another jar or demijohn and fit airlock.

When it clears siphon it off into a clean jar/bottle. 2 months later rack it again then bottle it.
