Damson Brandy

Not strictly a home made wine - but an interesting liqueur to make easily without any special equipment.

Pick 1½ lb. of ripe Damsons and wash them well. Wipe clean - removing the cloudy bloom on the fruit as you go.

Prick the Damsons all over with a thin knitting needle or darning needle and put them into a large screwtop container or jar. Add 3 oz of white sugar, a piece of crushed cinnamon stick, about 4 cloves and a bottle of Brandy.

Close top firmly and shake well. Stand in a cool place and shake regularly.

Keep for about 3 months then strain and bottle.

Note - you may top up the sugar a teaspoon at a time if the sweetness needs boosting - do this to taste and shake well after each addition.
