Barley Wine
Ingredients:
1lb barley
1lb raisins
1lb old potatoes (not peeled but cut into chunks)
4lbs white sugar
1oz yeast
1 lemon sliced
1 orange sliced
half teaspoon ground ginger
7 pints of hot (not boiling) water
Method :
Boil the barley in 2 pints of water for half an hour.
Strain off barley and reserve the water.
Then add sugar, stirring until dissolved.
Add rest of the water, making it hot but not boiling.
Add raisins, fruit, ginger and potato and allow to cool to lukewarm.
Activate the yeast and add to the rest.
Cover and allow all to ferment together for 2 weeks.
Strain off into a clean demijohn and fit fermenting lock.
Finish in the usual way.
Keep for 6 months until drinking.
